Wow, I never would have imagined the response to the “Simple Recipes” posts! I will need to post every day to get the wonderful recipes submitted out to our blog readers. This one comes from my childhood.
Crunchy Haddock
- 1.5 pounds fresh haddock
- 1 cup corn flakes
- 1/2 cup milk
- salt and pepper
- 1 teas. butter
Add corn flakes and salt and pepper to a gallon zip lock bag. Crunch corn flakes with your hands to make more of a powder. Dip haddock in milk and add to zip lock to coat. Place haddock on a broiler pan. Top with dots of butter. Bake at 425 degrees about 10 minutes. Serve with lemon.

Ah yes, the age old question, what will I cook for dinner? If you are like me, there are many nights when panic sets in at 4:45. At this point it is too late to take anything out of the freezer. The posts contained in Simple Recipes will be a quick and easy reference for that age old question: “What’s for dinner?!” If you have a recipe that fits the bill, meaning it is relatively SIMPLE, put it in comments and I will post it.
