Ah yes, the age old question, what will I cook for dinner? If you are like me, there are many nights when panic sets in at 4:45. At this point it is too late to take anything out of the freezer. The posts contained in Simple Recipes will be a quick and easy reference for that age old question: “What’s for dinner?!” If you have a recipe that fits the bill, meaning it is relatively SIMPLE, put it in comments and I will post it. Don’t get too hung up on the number of ingredients. If it is an easy recipe for you, chances are it will be for others too. Remember, the more coments or recipes added, the more Simple Recipes we will all have to choose from:)
This is one of my family’s favorite recipes that I learned from one of my parenting mentors, friend, and past neighbor Marion. She called it the Cheater Quiche. The beauty of this recipe, besides the fact that it is easy, is that you can vary it by changing the filler ingredient.
Cheater Quiche
- 2 eggs
- 1 cup mayonnaise
- 1/2 cup milk
- 1 cup shredded cheese
- prepared pie crust
- 1/2 chopped onion and any combinations of ham, bacon, black olives, asparagus, tomatoes, basil, etc, etc.
Directions: Combine eggs, mayonnaise, milk, and shredded cheese in a bowl, mix well. Saute onions and filler ingredient(s) in butter over medium heat. Roll pie crust out onto pie plate. Add sauteed onions and filler ingredient(s), dump egg mixture into pie crust. Bake at 400 degrees for 25 minutes reduce oven to 350 degrees for approximately 20 minutes.

How funny. I had bought a prepared crust the other day in hopes of making my first quiche. I layed in bed this morning and thought this would be the perfect day to make it. Lent and it’s Friday. Thanks for the recipe and I will let you know how it turns out. I will also add a few easy recipes myself that are delicious. Great blog. I expect nothing less from you.
